Bingo Salad

A quickie for week 3 of the Summer Salad Challenge. Not a recipe so much as a môde-de-préparatión:
  1. Grab some purple Thai rice you have left over from last night’s #saladfail. (You know, the yummy looking salad you got from the internet that was supposed to be this week’s salad? Yeah, that.)
  2. Add some bocconcini. Because you opened the container this afternoon and it’s already half gone. If it doesn’t go into today’s salad, it won’t make it into tomorrow’s.
  3. Rifle through the fridge some more – oh look! Grilled red peppers from… umm… sniff carefully, examine for signs of life, looks good? Toss it in!
  4. Dressing. Hey, didn’t Loblaws finally have some of that Renée’s Asian Sesame in stock last week? Yes, yes it did. Until you cleaned them out. Better start using some of that up.
  5. Bingo! It’s a salad.

The great thing about bingo
salad is the infinite possibilities.
