Chickpea, Red Pepper and Feta Salad

I remember when we were in Greece, and ordered a “Cucumber, Onion, and Tomato Salad”. And that is exactly what we got: a huge bowl of cucumber chunks, tomato slices and a thick slice of onion.

I don’t know what more we were expecting, really. We got exactly what we ordered. Plus a thick slab of feta, of course. In Greece, the feta goes without saying.

This salad is pretty much the same deal: chickpeas, red peppers, and feta, chopped however you like and in whatever proportions work for you, then drizzle with equal parts olive oil & balsamic vinegar. And whammo! Week one of the summer salad challenge is in the bag.

If you want to get fancy, throw some extra red peppers on the BBQ tonight and you’ll have roasted red peppers for your salad tomorrow. Opa!
