Corn, Crab, & Roasted Red Pepper Salad With Lemon Basil Dressing

This salad is a mishmash of 3 different recipes: I started with Crab, Corn, and Tomato Salad with Lemon Basil Dressing, took away some tomato (which I’m not that fond of – don’t ask me why I picked a recipe with “Tomato” in the title), added grilled red pepper (which I LOVE), and replaced the dressing with a cross between Ellen’s Lemon Basil Dressing and this Lemon-Basil Dressing (because I don’t like mustard, and I was unwilling to pick between honey and garlic).
And after all that, it still turned out okay

And (can I start another paragraph with “and”?) – AND this is salad number SEVEN of twelve for my Summer Salad Challenge. Over half-way! Woot! I’m already trying to figure out what I’m going to do for the fall… soups? Hmmm….

Light & tangy summer salad.
Ingredients
- 1 tomato
- 1 cup corn
- 1/2 cup chopped roasted red pepper
- 1/4 cup chopped grilled red onion
- 1 227g package chunk-style crab meat
- 10-12 fresh basil leaves, finely chopped
- 2 tbsp lemon juice
- 2 tsp olive oil
- 1 tsp minced garlic
- 1 tsp honey
- 1/8 tsp pepper
- 1 generous pinch of salt
Instructions
- Mix the vegetables & crab meat.
- Blend the remaining ingredients to make the dressing.
- Toss the vegetable mix with the dressing.
- Share and enjoy!

Looks tasty! I do like mustard so might have to try the original dressing recipe…but I’m with you on the roasted red peppers…waaay more tasty than tomatoes.
If you do, let me know how ‘mustardy’ it is
. I should probably try it too – mustard powder does have a tang that adds something. And as for roasted red peppers, I could eat them all day! Hooray for BBQ season!
